Depending on which manufacturer you order your cabinets from it could take up to 6 weeks for delivery of product.

yes , if your cabinet design are going to stay the same and it can be removed with no damage to the top.

Yes and No. The countertop manufacturers produce several different standard color styles which are mostly neutral in color and pattern. There are many to choose from.

There are some tools to make the job easeier,like grout remover tools, but it sounds like their could be other problems if the grout is breaking out. Could be deflection problems , (movement in the floor.)
Is it possible to lay ceramic tile on an uneven rough basment floor?
Yes, Using smaller tile would help in uneven area's. And you can use your thinset to help in raise the low tiles by appling more to the back of the tile that need leveling. On concrete you may need to acid etch the concrete for a good bond to the floor. You can use a self leveling compound for the really low area's to ease installation.
How do I replace old grout between my bathroom tile?
There are a couple of ways to make the change. One is to use a knife or a grout removal tool to remove and replace the grout. Second, if the grout is in good condition you can use grout stain to change the color or enhance it
